What we first thought were elk turned out to be Fallow deer (Dama dama), native to Eurasia.  Like elk, the males have palmate (flat) antlers.  There are elk at Woolaroc as well.  The white fallow deer are leucistic rather than albinistic, a distinction lost on most of us.

Highland cattle (Bos taurus) are a hardy breed native to Scotland, with sharp horns and shaggy coats.
